Once a village boarding school, it has been reimagined into a place where food, art, and nature come together in perfect harmony. More than just a restaurant with rooms, it embodies a way of life—one that values sustainability, creativity, and a deep connection to the land and the local community.

A Passionate Restoration

The story began in 2015 when a Belgian couple Kenneth Van den Berghe and Stefanie Van Haudenhove stumbled upon the forgotten school building in the picturesque village of Olargues. Drawn to its character and potential, they embarked on a journey to restore and revive it, respecting its history while shaping a sustainable future. By 2017, a plant-based restaurant and an art gallery had opened their doors, quickly becoming a hub for those who appreciate thoughtful food and creative expression.

The vision didn’t stop there. In 2020, six carefully designed rooms and suites were introduced, each spacious and understated, allowing the building’s original character to shine. The restoration process was meticulous, using reclaimed materials and traditional techniques to honour the past while integrating modern comforts with a light environmental footprint. Over time, a thriving vegetable garden took root, a cookbook was published, and more recently, a small pool, open-air gym, and pétanque court have been added, enhancing the experience for visitors. This year, L’École d’Olargues is introducing a new pool, filled with hydrolysed pure water, further reinforcing its commitment to sustainability. Free from harsh chemicals, this eco-conscious choice aligns with the property’s dedication to minimising environmental impact while enhancing the natural experience for those who visit. Thoughtfully designed to complement its surroundings, the infinity pool will offer a refreshing way to unwind after a day spent exploring the Haut-Languedoc, all while respecting the delicate balance of nature.

Living in Tune with Nature

Mornings here begin with a swim in the river, accessible by private stone steps, followed by a leisurely breakfast of fruits, yoghurts, pastries and homemade bread and jam. Afternoons may be spent exploring the surrounding forests, cycling through sun-dappled vineyards, or sitting beneath the trees with a book. Evenings invite a slower pace, enjoying a drink on the terrace as the light fades over the river and valley.

The owners’ passion for plant-based cooking extends beyond the restaurant’s seasonal menu. Stefanie, an interior designer and plant-based chef, authored the cookbook “Our Flavours of the South of France,” which showcases their passion for plant-based food and interior design.

This beautifully written cookbook is an ode to the land, filled with recipes that highlight wild ingredients, local produce, and traditional techniques. More than a collection of dishes, it shares the philosophy behind its approach—one rooted in simplicity, sustainability, and respect for nature.

The Magic of Olargues and Beyond

Wandering through the village of Olargues, it’s easy to see why it is considered one of the most beautiful in France. Medieval stone houses line the narrow lanes, and the iconic Devil’s Bridge arches over the river, a striking reminder of the village’s storied past. Wine lovers can spend the day exploring nearby vineyards, while history enthusiasts will find themselves drawn to the seaside town of Béziers, just 45 minutes away, with its imposing cathedral and rich cultural heritage, or to Carcassonne, a bit further afield. Carcassonne is a medieval masterpiece, a city where history lingers in every stone. Enclosed within its impressive double walls, the Cité de Carcassonne is a labyrinth of turrets, drawbridges, and cobbled streets that transports you to another time. Recognised as a UNESCO World Heritage site, it’s one of Europe’s most well-preserved and beautiful fortified towns. Walking through its gates, you’ll discover a mix of lively cafés, artisan shops, and centuries-old chapels, all framed by panoramic views of the surrounding countryside.

Food Rooted in Seasonality

Dining at L’École d’Olargues is an experience in itself, one that follows the seasons and celebrates the region’s natural bounty. Open only during the summer months when the owners are in residence, the restaurant offers a menu that evolves daily, inspired by what’s growing in the garden and what can be sourced from local farms.

Each dish tells a story: earthy plates of slow-roasted vegetables kissed by woodsmoke, fresh bread still warm from the oven, delicate fish dishes accented with citrus and fennel, and puddings that combine foraged berries and the rich sweetness of local honey. The food is honest, the origins are respected, and the understanding is that the best meals are often the simplest ones.
